Crust:
2 cups all-purpose flour
1 cup confectioners sugar, plus more for dusting
Pinch of salt
1 cup of butter, at room temperature
Filling:
4 eggs
2 cups granulated white sugar
6 tablespoons all-purpose flour
6 tablespoons fresh lemon juice
Preheat oven to 350, Lightly grease a 9 by 13 inch pan (make sure to go up the sides about an inch).
Crust - combine the flour, confectioners sugar, and salt in a large bowl. Cut in the butter to make a crumbly mixture. Press the mixture into the greased pan. Bake for 20 mins.
Filling - while the crust is baking, combine the eggs, sugar, flour and lemon juice.
I absolutely LOVE how yellow it is!
When the crust is done (it won't be completely cooked, but will start to be golden brown on the edges), pour the filling over the crust. Bake for 25 more minutes.
Sprinkle with confectioners sugar after it has been out of the oven for a few minutes. Once cooled, cut into squares and enjoy!
