food bit - chocolate chip banana muffins

if you follow me on instagram you know I made the most delicious chocolate banana muffins the other evening.

I followed the recipe my mom always used and they turned out amazing.  I made them in mini muffin trays so I would have a ton to take to work.  this recipe made 4+ dozen mini's and 6 regular sized ones.


1 1/2 cup sugar
1/2 cup chocolate chips (or nuts!)
2 cups flour
2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp allspice

3 eggs
3/4 cup oil
2 cups mashed bananas

preheat the oven to 350.
mix the dry ingredients in one bowl, the wet in another.  once they are all mixed, add the dry to the wet.  use the muffin method and only mix until the ingredients are incorporated.  do NOT over mix!
nobody like a hard dry muff amiright?

bake regular sized muffins for 30 minutes, mini ones for 15. if you make a loaf, bake it for an hour.

ever bake a banana loaf and find the sides are browning perfectly and the middle looks raw?
take a sheet of tin foil, cut out a rectangle (the size of the raw part of the loaf), cover with the tin foil and throw back in the oven so that everything is covered except the raw part.
no clue how this works but that's a tip from my momma and it works!

Dude these look so damn good. I love banana bread so it's a mystery to me why I never thought about incorporating chocolate chips...what a dope. Thanks for posting this though cause with this new job, the lady that had it before would always bake fresh something for the cops during our big events and now they kinda expect it all the time. Guess I better get started on the baking since we have a big event next weekend :/
