Chilli time! I've mentioned in my last couple of posts that I was going to share this chilli recipe with you and the time has come. I wish I could take credit for this deliciousness but the recipe cred goes to my sister.
Here's what you need:
- ground beef (I used medium because it was on sale but lean is healthier!)
- 1 large can of diced tomatoes
- 1 can of accents (they come in different kinds, mine was
- 1 package of Club House Chilli spice (I prefer original)
- bacon and/or corn is optional
In a large pot start cooking the beef.
When the beef is almost cooked add in the onions and mushrooms (there are no exact measurements on this but I used 1 large package of mushrooms and 3 small onions)
While that's cooking chop up some peppers and admire their pretty colours...
After about 10 minutes when the beef is cooked through add the peppers. (Here is where you could add some cooked bacon too! So yummy!)
I let that sit for awhile. In a jar mix together about 1 cup of water with the chilli spice.
Add the spice, diced tomatoes, and can of accents to the pot and let simmer! (with the lid on)
Basically the longer it simmers the better it tastes. I also added corn to mine, so good.
It totally freaked me out that there wouldn't be enough juice in it but after about an hour this is what it looked like, plenty of juice!
I made my sister give me pretty much exact measurements but it's too hard to do that with chilli! As long as you have a base (diced tomatoes) you can add whatever the hell you want.
I made it this weekend and added a lot more mushrooms, not as many onions, and more garlic salt then last time. Was still fantastic!
I'm thinking of adding in shaved carrots next time. Not a huge veggie fan but I need a way to incorporate them into my diet.
